My name is Angela Francis, though my friends and family call me Angie. I’m a mother of four, and a grandmother of four. I love living healthy and cooking clean nutrient meals, this makes me happy and thankful. I was a vegetarian for about ten years and a Vegan for over 20 years to the present. I have been preparing vegetarian, vegan, and raw food meals for over 20 years. During these years I have developed a wealth of knowledge and expertise on cooking and healthy eating.
Before I was a vegan. I ate meat and would enjoy eating processed food with little to no nutrients. During this journey of being a Vegan, I was a meat eater and I would eat junk processed food with little to no nutrients. I didn’t know better then and therefore I got sick easily. I would get a cold and flu at least twice a year. I believe I was very unhealthy. I didn’t like water, and would drink lots of soda. But then during my mid-twenties my life began to change. I became a Seventh Day Adventist Christian. I would hear a lot about eating healthy but never paying much attention to it until in the early 1990s when I read a book called The Ministry of Healing. This book changed my whole outlook on my dietary lifestyle.
During those years, I attended many health seminars that educated me on healthy eating. Needless to say, it was hard for me to change my present lifestyle back then because I loved to eat meat, fish, chicken, dairy, and junk food. Who would want to give that up? But I decided to try it and was amazed at the difference I felt. I stopped getting colds so easily and I would probably catch a flu once instead of twice a year. When I began to change my diet, I first cut out red meat, then chicken, and then fish. The egg and dairy continued a little while until I felt comfortable enough to stop. One of my first vegetarian meals I made was curry chickpeas. Next, I started making my own nut milk and cheese sauces. I began making homemade breads and cashew cheese cake. For many years I followed this lifestyle not realizing that my meals were not as nutritious as it should be.
I was still using lots of processed ingredients in my meals like the processed imitation meat sold at the health food store. As well as having homemade wheat bread every day because I was baking bread every week. So, I started to not feel healthy and started losing weight. I didn’t know what was happening. My skin was turning darker out of nowhere, I had hyperpigmentation. I was constantly feeling bloated due to indigestion. I decided it was best to seek help. I was able to see a naturopathic doctor who did a blood analysis. The result came back and to my surprise I had IBS (Irritable Bowel Syndrome). I didn’t know that the gluten in my bread and processed fake imitation meat was starting to rake havoc on my stomach and small intestine. I was told by the naturopathic doctor that I had to cut out gluten and avoid any process foods. I then started to do my own research on what is this IBS. So once again I began to change my whole lifestyle to incorporate more fruits and vegetables, soak my grains, nuts, and seeds. I started making sourdough bread, kefir milk and sauerkraut. My skin then began to get back it’s pigment and I did not have those symptoms of bloating and indigestion. And yes, I did put on back my weight. But I have learned so much more since this all happened.
I decided to receive more education. I took two different certification courses in health and nutrition, and have learned the art of how the body works to give health and longevity. Now, it would be my privilege to help others who have been in the same position and who want to change their lifestyle from the standard American diet to the life sustain healing lifestyle.
I am a COTA (Certified Occupational Therapist Assistant) and have a bachelor’s in health science. I worked in the hospital for over 20 years as an OT (Occupational Therapist). I have seen the havoc that unhealthy eating habits have done to so many patients. Each time I had an extremely sick patient it would reenforce to me the importance of healthy eating habits. I also recognized with many patients that those who follows a healthy lifestyle, heal faster, and get out of the hospital sooner.
Before I retired, I would make my own lunch to bring to work. Most of the time I was able to share with co-workers. I’m always cooking and sharing with friends and family. Therefore, most friends and family, and even coworkers would ask me to come and cook for them. They were always intrigued with what I ate, and would ask me how they can eat healthier or become a vegetarian etc. I realized there was a great desire for my knowledge on health and a great need that I could fill. I have decided to take on this challenge.
My desire is that I can use my knowledge and experience to help others have more control over their life by adapting a healthier lifestyle. Many people would benefit from replacing their eating habits to one that is healthier. Getting rid of unhealthy meals and incorporating nuts and seeds, fruits, vegetables and legumes will make a world of difference. All you need to know is how to prepare it.
